Roasted potatoes

Ingredients

  • 1 kg (2.2 lbs) baby potatoes
  • 8 tbsp mayonnaise
  • Salt and pepper to taste
  • 1 bottle of Patricia Quintana´s Roasted Tomato & Jalapeño Salsa

Preparation Time: 15 minutes
Cooking Time: 1 hour
Total Time: 1 hour and 15 minutes

Instructions

  • Cut the baby potatoes in half.
  • Toss the potatoes with red onion, mayonnaise, salt, pepper, and a few tablespoons of Patricia Quintana´s Roasted Tomato & Jalapeño Salsa.
  • Bake at 430°F for 45 minutes to 1 hour, stirring after 30 minutes. Make sure they are golden and crispy on all sides.
  • Remove from the oven and serve hot.
